Peanut Butter Snack Bars

The nutritional value of these cookies depends on the cereal you choose, the peanut butter gives them protein and the cereal can make them a good source of fiber.

(Makes 3 dozen bars)

1/4 c. butter

1/4 c. honey

1/3 c. brown sugar

1/2 c. semisweet chocolate chips

1/3 c. plus 2 T. peanut butter

3 cups natural cereal

  1. Line a 9" sq. baking pan with foil.
  2. In a 1 qt. saucepan combine butter, 2 T. peanut butter, honey and brown sugar. Heat over low heat, stirring occasionally, until smooth and sugar is melted.
  3. Pour hot mixture over cereal in large bowl, stir well. Turn cereal mixture into foil-lined pan, press down evenly.
  4. Cool completely

To make frosting:

  1. Combine chocolate pieces with 1/3 c. peanut butter in top of double broiler over hot water.
  2. Stir until chocolate melts and mixture is smooth.
  3. Spread over cereal mixture.
  4. Chill until firm. Cut into bars.

Crunchy Lemon Bars

(Makes 1 1/2 dozen)

1 1/2 c. powdered sugar

1/2 c. butter or margarine, softened

2 eggs, separated

1 c. all-purpose flour

1/4 tsp. salt

2 tsp. grated lemon rind

2 tsp. lemon juice

Pinch of salt

Pinch of cream of tartar

1/2 c. chopped nuts

  1. Preheat oven to 350 degrees.
  2. Cream 1/2 cup sugar and the butter.
  3. Stir in egg yolks, then add flour, 1/4 teaspoon salt, the lemon rind and 1 tablespoon of lemon juice.
  4. Spread batter ( it will be stiff) in ungreased 9" square pan.
  5. Bake 10 minutes.

While crust is baking, beat egg whites with the pinch of salt and cream of tartar until soft peaks form. Gradually beat in 1 cup of sugar, 1 tablespoon at a time; continue beating until stiff peaks form. Stir in 1 tablespoon lemon juice. Fold in nuts. Spread topping evenly over baked crust. Return to oven and continue baking 25 minutes. Cool in pan slightly. Cut in bars.

Walnut Crumb Bars

(Makes 36 bars)

I love walnuts and keep them on hand as a baking staple and for snacking. They add protein and flavor to recipes.

Ingredients

3/4 c. butter or margarine

3/4 c. sugar

1 tsp. vanilla

6 eggs

1 package (12 oz.) vanilla wafers, very finely crushed (3 1/4 cups crumbs)

1 cup flaked coconut

1 cup walnuts, finely chopped

  1. Preheat oven to 325 degrees.
  2. In a large bowl cream butter, sugar, and vanilla.
  3. With a mixer at low speed beat in eggs one at a time, alternately with crumbs.
  4. With rubber spatula, fold in coconut and walnuts.
  5. Turn into a well greased 9x9x2 inch cake pan. Bake in a 375 degree oven for 50 minutes or until a knife inserted in the center comes out clean.
