Barbecue
Chicken
The secret to great Barbecued chicken is to cook it slow and
put the sauce on in the last 10 minutes of cooking.
Ingredients
2 1/2 to3 lbs. cut up chicken
Sauce
4 T. water
2 T. brown sugar
2 T. butter
2 T. Worcestershire sauce
1 tsp.paprika
1/4 tsp. red pepper
1 tsp. dry mustard
3 T. ketchup
2 T. vinegar
1 T. lemon juice
1 tsp. salt
1 tsp. chili powder
Mix and simmer the sauce ingredients for about 15 minutes.
Season chicken pieces with additional salt. Place chicken pieces
, bone side down, over medium hot coals. Grill chicken 25 minutes
or till the bone side is well browned. Turn chicken grill another
20 to 25 minutes or until the chicken is tender. During the
last 10 minutes of grilling brush the chicken with sauce. Leave
the chicken on the grill just long enough for the sauce to glaze
not burn. Putting the sauce on too early results in a burnt
coating that is not desirable and is a common mistake when grilling
chicken.
*For large pieces of chicken such as breasts or frozen chicken
the cooking times might need to be increased.
