Broccoli and Cheese Soup
5 Chicken bouillon cubes
5 c. water
1 bunch of fresh broccoli or 1 (12oz.) pkg. of frozen broccoli
1 onion, chopped
1 to 1 ½ c. evaporated milk
1 c. cubed Velveeta or 1 (8 oz.) jar of Cheez Whiz
2 T. flour
Bring water to boil in a saucepan. Add bouillon cubes, stirring
to dissolve. Add the broccoli and onion, cook until tender.
Mix the 2 T. flour with the mixture, stir until smooth. Add
to the hot mixture. Add the cheese. Season to taste, remember
that the cheese and the bouillon cubes already contain large
amounts of salt so you may just need some pepper. Heat thoroughly
to melt cheese.
