Sweet Cheddar Meat Loaves

My family just loves these mini meat loaves.

1 egg

3/4 cup milk

1 cup shredded cheddar cheese (4 oz.)

1/2 cup quick-cooking oats

1/2 cup chopped onion

1 tsp. salt

1lb.lean ground beef

2/3 cup ketchup

1/2 cup brown sugar

1 1/2 tsp prepared mustard

In a bowl, beat together the egg and milk. Add cheese,oats,onion and salt and stir well. Add the beef and mix well. Shape into eight little loaves; place in a greased 13 x 9 baking dish.

For the Sauce

Combine ketchup, brown sugar and mustard; spoon over loaves. Bake, uncovered, at 350 degrees for 45 minutes or until the meat is no longer pink. A meat thermometer should read 160 degrees. Makes: 8 servings.

Baked Chicken and Rice

This is a easy recipe with basic ingredients

1 can condensed cream of mushroom soup

1 (4.3 oz) Pkg. rice and sauce mix (mushroom or chicken flavor)

1 1/2 c. water

4 pcs. frozen chicken

1.Combine rice and soup in a large baking dish. Gradually add water, stirring, until smooth.

2.) Rinse chicken pieces and arrange on top of rice.

3.) Bake at 350 degrees for 1 1/2 to 1 3/4 hours.

To use thawed or fresh chicken , shorten baking time.

Taco Pie

If you like tacos' and you like pizza you're gonna love this one.

Ingredients

1 can crescent rolls
1 ½ lbs. Lean ground beef
1 pkg. Taco mix
2 c. crushed Fritos
¾ c. water
12 oz. Grated cheese

Preheat oven to 400 degrees. Press crescent rolls into a 9- inch pie dish to form the crust. Spread 1 cup of crushed Fritos over the crescent roll crust. Brown the ground beef, drain excess fat, add ¾ cup of water and 1 package taco mix, mix well. Simmer for 10 minutes. Pour seasoned meat over the Fritos. Spread the cheese evenly over the meat layer. Add one more layer of crushed Fritos. Bake until the crust is lightly brown. Cut like a pie and serve with chopped tomatoes, shredded lettuce and sour cream.

Pork Chops and Rice

This is a one-skillet dinner. It can be prepared in an electric skillet or a large skillet on a stovetop.

Ingredients

4-6 center pork chops
3 carrots, peeled and sliced
1 can cream of celery soup
1 large onion chopped
oil to coat electric skillet
3 T. soy sauce
1 c. tomato juice
Enough water to simmer 45 minutes or until done
Rice, cooked according to the directions on the bag or box

Brown pork chops in hot electric skillet.
Add carrots, cream of celery soup, onion, soy sauce, tomato juice and water. Turn skillet down to low and simmer 40-45 minutes or until done. Serve over rice.

Pizza Burgers

Add a salad and you have a fast meal that everyone enjoys.

1 lb.lean ground beef

1 can (15oz.) pizza sauce

1 t. dried oregano

1/2 medium onion

1/2 medium green pepper

1 oz. sliced pepperoni

6 hamburger buns, split

1/2 c. shredded Mozzarella cheese

1/2 c. sliced fresh mushrooms

Brown the ground beef in a skillet. Drain. Stir in the sauce and oregano. In a food processor, chop the onion, pepper and pepperoni and add to the beef mixture. Simmer 20 to 25 minutes. Spoon mixture onto buns. Top with Mozzarella cheese and mushrooms. Serve immediately. Makes: 6 Servings
