I've tried a lot of peanut butter cookie recipes but this one
by Crisco is my favorite.
Peanut Butter Cookies (Makes
about 3 dozen)
11/4 c. firmly packed light brown
sugar
3/4 c. creamy peanut butter
1/2 c. Crisco Shortening
3 T. milk
1 T. vanilla
1 egg
1 3/4 c. all-purpose flour
3/4 tsp. baking soda
3/4 tsp. salt
1.)Preheat oven to 375 degrees.
Place sheets of foil on countertop for cooling cookies.
2.)Combine brown sugar, peanut
butter, Crisco Shortening, milk and vanilla in a large bowl.
3.) Beat at medium speed of electric
mixer until well blended.
4.)Add egg. Beat until just blended.
5.) Combine flour, baking soda
and salt. Add to creamed mixture at low speed. Mix until just
blended.
6.)(Kids love to do this
part) Use a tablespoon to drop rounded spoonfuls
of dough 2" apart onto ungreased baking sheet. Use tines
of fork to flatten slightly in crisscross pattern.
Bake one baking sheet at a time
at 375 degrees for 7 to 8 minutes, or until set and just about
brown. Do not overbake. Cool 2 minutes on baking sheet. Remove
cookies to foil to cool completely.
