Fudgy Cookies

(Makes 2 dozen)

1/4 c. butter or margarine, softened

1 1/3 c. all-purpose flour

1 tsp. baking powder

1 c. sugar

1/3 c. packed brown sugar

1/2 c. cocoa powder

1 tsp. vanilla extract

3 lg egg whites, lightly beaten

1/4 tsp. salt

Confectioners sugar, for rolling

  1. Preheat oven to 350 degrees.
  2. Combine flour, granulated sugar, brown sugar, cocoa, baking powder, and salt, break up any lumps of brown sugar.
  3. Blend in butter or margarine until the mixture is well combined and crumbly (this can be done in a food processor with a pastry blender)
  4. Add egg whites and vanilla extract. Stir by hand just until dough comes together.
  5. Place 1/2 cup confectioners sugar in a shallow dish. Roll dough into 1 1/2 inch balls, then roll balls in confectioners sugar to coat.
  6. Coat a baking sheet with cooking spray. Place the balls 2" apart on the baking sheet. Bake 12 to14 minutes, till set around the edges but still soft in the middle. Transfer to a cooling rack.

They will have a cracked appearance.
